  • 8 eggs
  • 2 cups milk
  • 1 tsp salt and pepper

Made with savory sausage, eggs, cheddar cheese, tortillas, and our flavorful Gilly Loco Red Chile Sauce, this casserole comes together quickly and bakes into a cheesy, golden dish everyone will love. Even better, you can prepare it the night before and simply bake it the next morning.

Ingredients

  • 1 pound breakfast sausage, cooked and drained

  • 8 corn tortillas, cut into bite-sized pieces

  • 4 cups shredded cheddar cheese, divided

  • 12 eggs

  • 2 cups milk

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • 1 jar Gilly Loco Red Chile Sauce

  • Optional: sliced jalapeños, green chile, onions, or your favorite vegetables

Instructions

1. Prepare the Sausage

Cook the sausage in a skillet until browned. Drain and blot any excess grease with paper towels.

2. Assemble the Casserole

Grease a 9x13-inch baking dish.

Layer the tortilla pieces evenly across the bottom of the dish. Sprinkle half of the shredded cheddar cheese over the tortillas. Add the cooked sausage in an even layer.

3. Mix the Eggs

In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.

Pour the egg mixture evenly over the sausage and cheese layers.

4. Add the Red Chile

Spoon the Gilly Loco Red Chile Sauce over the top of the casserole. Sprinkle with the remaining cheddar cheese.

For extra flavor, add sliced jalapeños, green chile, onions, or your favorite vegetables before baking.

5. Bake

Preheat oven to 350°F.

Bake for 35–45 minutes, or until the eggs are set and the cheese is melted and golden brown.

Allow the casserole to rest for 5–10 minutes before serving.
