Gilly Loco was founded in Albuquerque in 2011 by siblings Laura and David, inspired by a love of bold New Mexico flavor and the belief that life happens around the table. What started with salsa has grown to include authentic Hatch chile sauces and thin, crispy, seed-oil-free tortilla chips cooked in 100% coconut oil.
