Chile Verde Lasagna

Lasagna

Béchamel Sauce

3½ tablespoons butter

Instructions
Prepare the Beef Mixture
In a large sauté pan, brown the ground beef over medium heat. Reduce heat to low and stir in Gilly Loco Hatch Green Chile Sauce. Simmer for 5 minutes.
If the mixture becomes too thick, add a splash of beef or vegetable stock. Season with salt and pepper and remove from heat.
Prepare the Béchamel Sauce
In a 2-quart saucepan, melt butter over low heat. Whisk in flour until smooth. Slowly add milk while whisking continuously.
Bring to a gentle simmer and stir in the shredded asadero cheese until melted and smooth. Season with salt and pepper.
Assemble the Lasagna
Spread a thin layer of the beef mixture in the bottom of a 10½-inch x 7-inch casserole dish.
Layer with uncooked lasagna noodles, beef mixture, and béchamel sauce.
Repeat layers until all ingredients are used.
Finish with a final layer of noodles, a thin layer of béchamel sauce, and shredded cheddar cheese.
Bake
Preheat oven to 350°F.
Bake for 40 minutes, or until the top is bubbly and golden brown.
Allow the lasagna to rest for 10 minutes before serving.
