Chile Verde Lasagna

Love lasagna but craving something bold and unexpected? This Chile Verde Lasagna combines layers of pasta, seasoned beef, creamy béchamel sauce, and Gilly Loco Hatch Green Chile Sauce for a delicious New Mexico twist on a comfort food classic.

Rich, cheesy, and packed with flavor, this recipe is perfect for family dinners, potlucks, or anytime you want to bring something memorable to the table.

Ingredients

Lasagna

Béchamel Sauce

  • 3½ tablespoons butter

  • ¼ cup all-purpose flour

  • 4 cups milk

  • 2 cups asadero cheese, shredded

  • Salt and pepper, to taste

Instructions

Prepare the Beef Mixture

In a large sauté pan, brown the ground beef over medium heat. Reduce heat to low and stir in Gilly Loco Hatch Green Chile Sauce. Simmer for 5 minutes.

If the mixture becomes too thick, add a splash of beef or vegetable stock. Season with salt and pepper and remove from heat.

Prepare the Béchamel Sauce

In a 2-quart saucepan, melt butter over low heat. Whisk in flour until smooth. Slowly add milk while whisking continuously.

Bring to a gentle simmer and stir in the shredded asadero cheese until melted and smooth. Season with salt and pepper.

Assemble the Lasagna

Spread a thin layer of the beef mixture in the bottom of a 10½-inch x 7-inch casserole dish.

Layer with uncooked lasagna noodles, beef mixture, and béchamel sauce.

Repeat layers until all ingredients are used.

Finish with a final layer of noodles, a thin layer of béchamel sauce, and shredded cheddar cheese.

Bake

Preheat oven to 350°F.

Bake for 40 minutes, or until the top is bubbly and golden brown.

Allow the lasagna to rest for 10 minutes before serving.
