One of the greatest things about fall is watching the leaves change colors. As the leaves change from green to a crisp golden-red, it is a breathtaking sight to see.
Have you ever thought of the way that chili turn from green to red? Most people don’t know this but red chili and green chile come from the same plant! The longer the chili stays on the stem the riper it becomes. Although they are the same plant, they have very different flavors.
It’s amazing how the flavors are so very different yet still so delicious. This is one of the only crops that you can pick early and it will have an amazing taste. The red chili is left on the stem longer then green chili, which means that farmers harvest less red chili per season than they do green chili. No need to worry because Hatch harvests plenty of red chili to go around!
