Instructions
Sauté the Vegetables
Heat olive oil in a large stockpot over medium heat. Add onion, garlic, carrots, celery, thyme, and bay leaf. Cook for about 6 minutes, or until vegetables begin to soften.
Add the Flavor
Pour in the Gilly Loco Hatch Green Chile Sauce, chicken stock, and heavy cream. Stir in the herbes de Provence and bring the soup to a gentle simmer.
Thicken the Soup
In a small bowl, whisk together cornstarch and water to create a slurry. Slowly stir the slurry into the soup until it reaches your desired consistency.
Add the Chicken and Noodles
Add the shredded chicken and egg noodles. Season with salt and pepper to taste.
Simmer
