Ingredients

  • 1½ cups fresh pineapple chunks
  • 4 cups cooked Jasmine white rice (day-old, refrigerated)
  • 3 tablespoons chicken stock
  • 1 egg
  • 2-3 cups rotisserie chicken, diced
  • ½ cup frozen peas
  • 1 small carrot, grated
  • ¼ cup raisins
  • ½ cup roasted, unsalted cashews
  • ⅓ cup fresh coriander (cilantro)

Stir-Fry Sauce:

  • ¼ cup Gilly Loco Ghost Pepper Sauce™
  • 3 tablespoons soy sauce
  • 2 teaspoons Thai curry powder

Instructions:
  1. Prepare the Rice:
    Cook the rice a day in advance and store it in the refrigerator overnight. Before starting the stir-fry, separate the rice by running it through your fingers to remove any clumps.
  2. Mix the Stir-Fry Sauce:
    In a small bowl, combine Gilly Loco Ghost Pepper Sauce™, soy sauce, and curry powder to create the stir-fry sauce.
  3. Cook the Egg:
    Drizzle 2 tablespoons of oil into a wok or large frying pan over medium-high heat. Add the egg and scramble until cooked.
  4. Stir-Fry the Ingredients:
    Add the rest of the ingredients (except the chicken stock) and stir-fry. If the pan becomes dry, gradually add the chicken stock to keep it moist.
  5. Add the Stir-Fry Sauce:
    When the rice and vegetables start to brown, pour in the stir-fry sauce. Continue to stir-fry for another 30 seconds, ensuring everything is well-coated with the sauce.
  6. Serve:
    Remove from heat and serve hot.
