Gilly Loco Verde Steak Tacos

Gilly Loco™ Very Verde Steak Tacos

Ingredients:

  1. 2 lbs. skirt steak
  2. 6, 6-inch white corn or flour tortillas
  3. ½ cup grated cotija cheese for topping
  4. minced cilantro for garnish
  5. Gilly Loco Tomatillo Salsa™ to taste

Marinade:

  • ¼ cup Gilly Loco Tomatillo Salsa
  • 1 bunch fresh cilantro, minced
  • 1 cup extra virgin olive oil
  • 3-4 cloves garlic minced
  • 1 lime, zested and juiced
  • 1 tablespoon brown sugar
  • 2 tablespoons soy sauce
  • 1 tablespoon cumin
  • 1/2 tablespoon salt
  • 1 tablespoon fresh cracked black pepper

Directions:

  1. Combine all marinade ingredients in a small baking dish.
  2. Place steak into dish and coat with marinade.
  3. Cover dish and refrigerate for 1-8 hours, or overnight.   
  4. Pre-heat grill on high.
  5. Grill steak to medium about 8-10 minutes per side depending how thick the steak is and how hot your grill gets.
  6. Rest steak for 5 minutes.
  7. Slice steak thinly against the grain.
  8. Add a few strips of steak to a tortilla.
  9. Top with cheese, cilantro and Gilly Loco™ Tomatillo Salsa.

Chef Notes:

*The possibilities of toppings for these tacos are endless, but here are some suggestions:

  • guacamole (see Gilly Loco™ Recipes)
  • roasted peppers
  • avocado slices
  • onion, diced

*To spice up the marinade, use Gilly Loco Ghost Pepper Salsa™ in place of the Gilly Loco Tomatillo Salsa™.

*The longer the steak marinades, the more tender the steak will become.
