Very Verde Steak Tacos
Gilly Loco™ Very Verde Steak Tacos
Ingredients:
- 2 lbs. skirt steak
- 6, 6-inch white corn or flour tortillas
- ½ cup grated cotija cheese for topping
- minced cilantro for garnish
- Gilly Loco Tomatillo Salsa™ to taste
Marinade:
- ¼ cup Gilly Loco Tomatillo Salsa™
- 1 bunch fresh cilantro, minced
- 1 cup extra virgin olive oil
- 3-4 cloves garlic minced
- 1 lime, zested and juiced
- 1 tablespoon brown sugar
- 2 tablespoons soy sauce
- 1 tablespoon cumin
- 1/2 tablespoon salt
- 1 tablespoon fresh cracked black pepper
Directions:
- Combine all marinade ingredients in a small baking dish.
- Place steak into dish and coat with marinade.
- Cover dish and refrigerate for 1-8 hours, or overnight.
- Pre-heat grill on high.
- Grill steak to medium about 8-10 minutes per side depending how thick the steak is and how hot your grill gets.
- Rest steak for 5 minutes.
- Slice steak thinly against the grain.
- Add a few strips of steak to a tortilla.
- Top with cheese, cilantro and Gilly Loco™ Tomatillo Salsa.

*The possibilities of toppings for these tacos are endless, but here are some suggestions:
- guacamole (see Gilly Loco™ Recipes)
- roasted peppers
- avocado slices
- onion, diced
*To spice up the marinade, use Gilly Loco Ghost Pepper Salsa™ in place of the Gilly Loco Tomatillo Salsa™.
*The longer the steak marinades, the more tender the steak will become.
