- Salt and pepper, to taste
- 2 Tbsp fresh squeezed lime juice

Instructions
Sauté the Aromatics
Heat olive oil in a large pot over medium-high heat. Add the shallot and cook until softened, about 2–3 minutes. Stir in garlic and cumin and cook for another minute.
Build the Soup
Add Gilly Loco Chipotle Salsa, pumpkin, chicken stock, Mexican oregano, salt, and pepper. Reduce heat to low, partially cover, and simmer for 30 minutes.
Blend Until Smooth
Remove from heat. Working in batches, blend the soup until silky smooth. Return to the pot or a serving bowl.
Finish and Serve
Stir in fresh lime juice. Add additional chicken stock if needed to reach your desired consistency. Taste and adjust seasoning before serving.
