Ingredients

  • 1 lb pasta
  • 4 egg yolks
  • 1 cup heavy cream
  • 1 cup Hatch Gilly Loco Chile Sauce®
  • 1 cup Parmesan cheese, grated
  • 6 slices bacon, chopped
  • Fresh cilantro, minced
  • Salt and pepper to taste

Instructions

1. Boil the Pasta

Bring a large pot of unsalted water to a rapid boil.

Cook the pasta until al dente according to package instructions.

Reserve ¼ cup of pasta water before draining.

2. Make the Creamy Chile Verde Sauce

In a bowl, whisk together the egg yolks, heavy cream, Gilly Loco Chile Verde Salsa®, and grated Parmesan cheese until smooth and creamy.

Set aside.

3. Cook the Bacon

In a large sauté pan, cook the chopped bacon until crispy.
