CK’S SALSA VERDE CHICKEN BAKE

“I absolutely love Gilly Loco’s Tomatillo Verde Salsa!  I make a Salsa Verde Chicken Bake with it that my husband and boys devour.  They ask for it on a weekly basis!  It is SO easy-that makes me love it too! Just pour the entire jar of salsa over chicken and bake for 35 minutes.  Add monterey jack or pepper jack cheese and melt.   My friends are serving it too, but it’s your Tomatillo Salsa that makes it!”  -CK

INGREDIENTS: 

  • 3-6 boneless chicken breast (depending on how many you need to feed)
  • 1 jar of Gilly Loco Tomatillo Salsa (enough to completely cover chicken)
  • 5-12 oz of shredded cheese (monterey or pepper jack)
  • Fresh cilantro
  • Rice or Quinoa 

INSTRUCTION:

  1. Preheat oven to 350
  2. Cube chicken breast into small pieces
  3. Fill the bottom of an 8×8 or 9×13 baking dish
  4. Pour Gilly Loco over the entire chicken (enough to cover all the chicken)
  5. Put in the oven for 30-35 mins or until chicken is fully cooked
  6. Take out, sprinkle with cheese, up the oven to 400, bake 5-10 min to melt the cheese

GARNISH:

Serve over rice or quinoa and sprinkle some fresh cilantro if you wish!
